Bourbon is a type of whiskey made from a mash consisting of at least 51% corn. The spirits are further classified as rye or wheat, depending on the primary grains used to flavor the beverage. Here’s a closer look into the differences between each.

Rye Bourbon

In a high-rye bourbon, the mash bill contains 20 to 35 percent rye. These drinks have a strong aroma and taste, and are known for their dry, peppery flavor. Rye creates a bold flavor with elements of spices, fruit, and even grassy notes. While rye varieties mix well in cocktails, they can also be enjoyed neat or on the rocks.  

Since rye is already spicy, pair these varieties with dishes that are just slightly spicy for a complimentary effect that won’t be overpowering. For instance, smoked foods and roasted nuts work well with the drink.

Fatty meats and fish, like pork chops and salmon, can help to balance out the liquor’s spicy flavors. Rich cheeses, such as brie, and chocolate can also tame the alcohol’s burning effect.

Wheat Bourbon

High-wheat bourbon can have up to 45% wheat in its mash bill. Where high-rye varieties are bold, wheat-forward whiskeys are mild. Wheat is less aggressive and has a smoother, softer flavor. 

Fans of the beverage find that it’s easier to drink, which means it’s more often enjoyed neat or on the rocks. It can still be used in cocktails, however, though the flavor of the spirit may not be as bold as rye-based varieties.

As with rye varieties, you can choose to either complement or contrast wheat flavors. Since wheat is already sweet, high-wheat spirits will tame the sweetness of fruit or chocolate. If you’re seeking contrast to make flavors pop, consider salty or spicy foods. 

Foods like bacon, grilled steak, and pan-seared salmon create a robust flavor profile when paired with the whiskey. A charcuterie board featuring aged cheeses, jams, and nuts will also work well with just about any bourbon.
