Seared Scallops over Garlic-Lemon Spinach

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound sea scallops (approx 12)
  • 2 garlic cloves, minced
  • 1 shallot, minced
  • 1 (6 oz) bag of baby spinach leaves, washed
  • 1 tablespoon fresh lemon juice
  • Lemon wedges
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions:

  1. Heat the oil in a large nonstick skillet over medium heat. Sprinkle the scallops with salt and pepper.
  2. Place scallops in the skillet; cook 2-3 minutes on each side until golden brown. Remove from pan; cover to keep warm.
  3. Add garlic and shallot to the skillet and cook until the garlic is fragrant; about 45 seconds.  Add spinach; cook 2 minutes or until it starts to wilt; stirring occasionally. Remove from heat and stir in the lemon juice.
  4. Serve scallops over spinach with lemon wedges, if desired.
