Keep the heat outside and your kitchen clean with this easy, low-calorie meal to throw on the grill!

Ingredients:

  • Cooking spray
  • 1/2 cup cherry or grape tomatoes
  • 1/2 cup diced zucchini
  • 1/2 cup thinly sliced red onion
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt and pepper
  • 2 (4 oz) fillets of your favorite white fish

Directions:

  1. Preheat grill to medium.
  2. In a medium bowl, toss the vegetables with lemon juice, olive oil, oregano, and a sprinkle of salt and pepper.
  3. Prepare the packets. Place two large pieces of foil on top of each other. Spray the top piece with cooking spray. Place one fish fillet in the center, with 1/2 of the vegetable mix. Wrap foil loosely around the fish and veggies, leaving room for steam to gather. Make sure seams are sealed tightly to allow steaming.
  4. Grill packets for 5 minutes, until the fish is cooked thoroughly.
  5. If you'd rather cook in the oven, you can bake the foil packets for 20 minutes at 425 degrees F.
