To remain energized and feel full longer, start the day with a protein-packed breakfast. Steak, for example, is satisfying, hearty fare to order at your local diner. The server will ask what degree of doneness you want the meat. Options range from rare to well done. The slight temperature differences affect the taste and texture of the steak. Before you dine out, read this guide to decide how done your steak should be.

What Are the Different Options for Steak Doneness?

1. Rare

Rare is the juiciest steak option, as the meat is only left on the grill to cook until its internal temperature is 120 to 130 degrees Fahrenheit. This is only long enough for the meat to develop a slight sear on the outside while retaining the cool red interior. Rare ribeyes and porterhouse steaks are known to be succulent, so consider this doneness if you prefer the softest texture.

2. Medium Rare

If you prefer a rare steak with a crust that's slightly more charred, order the meat medium rare at a breakfast restaurant. Cooked to an internal temperature of 135 to 145 degrees, the meat's center is warm red and the texture is buttery.

3. Medium

If you don't want to see any red, choose medium steak doneness for breakfast. The brown, charred exterior adds richness to the meat. The internal temperature is 140 to 150 degrees Fahrenheit, which makes the center pink and the texture slightly firmer than a medium rare steak.

4. Medium-Well

With a medium-well steak, the charring is thick and the meat is brown with a thick pink center that is barely detectable. The steak is cooked at an internal temperature of 155 to 165 degrees Fahrenheit. Although the meat is still moist, it is not as juicy as steaks with lower cooking temperatures.

5. Well-Done

When you order a steak well-done, the meat is cooked at an internal temperature of at least 170 degrees Fahrenheit, which makes it the firmest option. Using low heat and a slow cooking method allows the meat to cook until all red and pink are gone without burning the outside or drying out the inside.
