When it comes to classic sandwiches, you can’t beat the French dip. Despite the name, this beloved sandwich is American food all the way, as its origins are traced back to California during the early 1900s. Like many famous dishes, the actual inventor of the French dip is hotly debated. 

What Is a French Dip Sandwich?

For all the flavor this classic dish contains, the French dip sandwich is actually pretty simple. While it’s normally made with thinly sliced beef, it can also contain pork. The meat is pan-fried, which creates delectable drippings called “au jus” (which is French for “with juice”). The finished sandwich is then served on a French roll with a side of the juice for dipping. 

Who Really Invented It?

American foodThere are two rival origin stories when it comes to the French dip. In one version, famed LA restaurant Philippe’s created the dish when a beef sandwich was accidentally dropped into the fresh frying pan drippings immediately before serving. This led to what was referred to as the “French Dipped sandwich,” which proved to be a huge hit with patrons.

In another version, Cole’s, which is an equally esteemed LA eatery, claimed to have invented the meal for a customer with oral issues that caused gum sensitivity. The solution was to dip the crusty French bread into au jus to soften it up. 

While the topic is still under debate, LA Eater points to evidence that Philippe’s was the true inventor. Cole’s didn’t start using the name until it had already been used by Philippe’s. Additionally, Philippe’s French owner, Philippe Mathieu, was quoted in a 1951 magazine article retelling the most commonly accepted version of events.
