That means there are considerable variations in regional cuisine, with each part of the state offering its own recipes and flavors. Brisket

A brisket is cut from the breast area of the cow. It requires long, low, and slow cooking times to break down fat and tissue and enhance the natural flavor of the meat. 

In East Texas, brisket is popular as pulled pork sandwiches topped with pickles and onions; in Central Texas, it has a distinctly oaky smokiness; in the Hill Country, the focus is on the meat, not the sauce; and in South Texas, there is a zip of Tex-Mex spiciness.

Ribs

Perhaps no barbecue dish is more quintessentially Texan than a big plate of pork ribs. No matter where you find them in Texas, they are always cooked until the meat is melt-in-your-mouth tender. But the real secret, as they say, is in the sauce. 

East Texans tend to prefer a sweeter, ketchup-based barbecue sauce. South Texas and the Hill Country add plenty of peppers, like ancho, cayenne, and chipotle, for an unmistakable hit of spice. And in Central Texas, sauce isn't terribly common; it's always served on the side—if it's served at all.

Sausage

Sausages, whether links or kielbasa, can be found on most barbecue menus throughout Texas. You'll enjoy the taste of chili, garlic, and paprika in East Texas sausage. 

In Central Texas, sausage has more standard seasonings, like black pepper and sage, though in much heartier doses than you'd find in other parts of the country. The Hill Country traditionally cooks its barbecue over hot coals rather than in smokers, bringing out the natural umami flavor of the sausage and giving it a firm but juicy casing.
