Fire safety is an important consideration in all building plans, but it’s especially essential in restaurants with active kitchens and lots of heat. The federal government has fire safety regulations for dining establishments, and some municipalities have more specific requirements. Following these rules not only ensures the property is compliant with building codes, but also protects employees and customers. What Fire Safety Precautions Do Restaurants Need to Include in Building Plans?

1. Emergency Exits

Every commercial building needs at least two fire exits that employees and visitors can use during an emergency. These should be located on opposite sides of the restaurant, so it’s possible to get out even if one area is inaccessible. The doors also need to be clearly marked with illuminated signs.

2. Ventilation Systems

Cooking equipment creates a lot of smoke and grease that create fire hazards. Vent hoods and duct systems help direct these materials safely out of the kitchen. These pieces of equipment should also be professionally maintained to prevent grease buildup.

3. Suppression Devices

Restaurants with more than 5,000 square feet are required to have overhead sprinkler systems installed. These detect smoke and automatically release water to extinguish flames. It’s also important to have fire extinguishers in kitchens to put out grease fires, as water isn't effective when cooking oil is involved.

4. Fire Alarms

Alarms alert people in the building when they need to evacuate. Some automatically initiate when they detect smoke or heat, while others do so when pulled manually. These are required in kitchens and dining areas for restaurants with occupancy of 300 or more, but MEP engineering professionals may recommend them even for smaller establishments for added protection.
