What Is Wasabi?

Wasabi is a pungent, green paste that is often served with sushi and sashimi. But contrary to popular belief, real wasabi is not just a mixture of horseradish and food coloring. In fact, real wasabi comes from the stem of the Wasabia japonica plant, which is native to Japan.

The process of making real wasabi is complex and time-consuming. After the stem is harvested, it is grated into a fine paste using a special tool called a sharkskin grater. This process gives wasabi its signature texture and heat.

It is also unique because it contains compounds that are not found in horseradish or other spicy condiments. These compounds give wasabi its distinct flavor and aroma, which is often described as a combination of heat, sweetness, and earthiness.

Why Do Many Restaurants Serve Imitation Wasabi?

Because real wasabi is so expensive and hard to find, many restaurants use imitation wasabi instead. Imitation wasabi is often made from a mixture of horseradish, mustard, and food coloring. While it may look and taste similar to real wasabi, it does not have the same complex flavor profile.
