Traveling to Hawaii affords visitors many memorable experiences. Along with historic attractions and exquisite scenery, Hawaii has an assortment of delectable seafood dishes to devour. It’s easy to feel overwhelmed when you explore the menus at restaurants, but each fish offers its own unique characteristics and flavor profiles. Here are three popular fish to try on your next vacation.

Which Local Fish Should You Try in Hawaii?

1. Mahi-Mahi

Although heavily exported and widely recognized, mahi-mahi is best enjoyed when you travel to Hawaii to experience the difference in local preparation. Known as dolphin fish, mahi-mahi is firm, with white flesh and a generally mild, delicate taste. Restaurants prepare it in many different ways; its versatility lends itself well to poaching, broiling, sautéing, grilling, baking, and frying.

It’s a protein-rich fish that is typically available all year, although its peak catch seasons are usually between March through May and September through November.

2. Kajiki

Honolulu, HI restaurantsKajiki, or blue marlin, is easy to detect with its dark skin, but you’ll probably see it used to prepare raw dishes, like ceviche and sashimi, thanks to its firm texture and high-fat content. Its flesh may be pink or white, and the fish has a mild flavor.

If you’re not a fan of raw fish, skilled restaurant chefs may broil, grill, smoke, and fry kajiki. The ingredient is available year-round but is commonly caught between the peak months of June through October.

3. Ono

Ono, or “delicious,” is also known as wahoo. The white flesh is firm and juicy, and boasts a mild, semi-sweet flavor. It’s a highly versatile choice that can be blackened, grilled, poached, or broiled. When cooked, it has a light and flaky texture. The seafood is caught during the peak summer and fall months, from May through October.
