When it comes to Vietnamese food, the spring roll is a classic, often found alongside a bowl of pho. It's perfect as an appetizer, side, or—depending on how many you order—a meal on its own. However, if you haven't tried it often, you might not know that this popular dish is available in several ways. Here are some of the most popular.

What are the Different Types of Vietnamese Spring Rolls?

1. Fresh Spring Roll

Also known as gỏi cuốn, this popular dish is what many think of when hearing about a spring roll. Light and refreshing, it's a straightforward recipe with fresh vegetables, rice vermicelli, and cooked meat, all housed in a thin, translucent rice wrapper.

The meat inside is traditionally pork or shrimp. However, like many Vietnamese foods, there are also vegetarian variations, which typically consist of tofu or mushrooms. Fresh spring rolls are often served with peanut sauce or garlic and soy sauce dips.

2. Fried Spring Rolls

If you enjoy a bit of crunch, you might prefer the fried spring roll. Depending on the restaurant and tradition, it can be referred to as nem rán or chả giò. It has similar contents to the fresh version, but it's all fried after being wrapped. However, it offers a few more filling options, including beef, chicken, crabs, eggs, and mushrooms.

The fried spring roll pairs well with a garlic and soy sauce dip, but a Vietnamese fish sauce with rice vinegar, chili, lime, and sugar can also enhance the taste. You might also find a garnish of mint that balances out the rich, fried flavors.

3. Pho Roll

Unlike the other two types of this dish, a pho roll uses a rice sheet closer to the kind used for pho noodles. The result is something a little thicker than the fresh variety. Inside, it's usually leafy greens and beef. The taste resembles traditional beef pho without the broth, but the meat is stir-fried and marinated. A pho roll is generally served as a side to heftier Vietnamese foods. You can dip it in a fish sauce featuring carrots, chili, garlic, and vinegar.
