Happy Memorial Day Weekend!  This recipe is excellent for adults and kids and so versatile! You can make chicken salad sliders, low-carb wraps, or just serve on a bed of your favorite greens! This healthy, high-protein option will keep you feeling satisfied throughout the day.

Rosemary Chicken Salad: 

(makes 3 servings)

Ingredients:

  • 1/2 cup nonfat Greek yogurt
  • 2 tbsp. light mayonnaise
  • 1 tbsp. red wine vinegar
  • 2 tsp. chopped, fresh rosemary
  • 1 tsp. Dijon mustard
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • 1 pound, boneless, skinless chicken breast - cooked, cooled, and cubed
  • 1 medium apple, chopped
  • 1/3 cup chopped pecans
  • 1/3 cup unsweetened dried cranberries

Directions:

In a small bowl, mix together the Greek yogurt, mayonnaise, red wine vinegar, rosemary, Dijon mustard, and onion powder. Season with salt and pepper.

Combine the chicken, apples, pecans, and cranberries in a large mixing bowl. Pour the Greek yogurt mixture over the top. Toss well to coat.
