What Are the Origins of Vodka?

Depending on who you ask, vodka originated either in Russia or Eastern Europe, as far back as the eighth or ninth century. Due to this timeline, the first vodkas likely came before the distillation process arose, which separates alcohol from water through evaporation and condensation. Therefore, the earliest versions of this liquor contained little alcohol, had a notably different taste and appearance than modern vodkas, and were largely used for medicinal purposes.

Vodka was mainly medicinal, even when the first distillery was built in 1774 in Khylnovsk, Russia. It only became a popular beverage in the 18th century with the development of an early precursor called polugar, made from wheat. This style was constantly refined and perfected until it eventually resembled today's vodka. In 1830, with the invention of the first continuous distillation equipment, vodka became mass-produced, increasing its popularity.

How Did It Spread to America?

Russia and Poland were the epicenters of the vodka world until Prohibition was enacted in the United States in 1920. However, in 1911, a hotel in New Orleans made the first documented American cocktail that included this liquor as an ingredient. However, it was too unknown at the time to be a big hit.

During Prohibition, American bartenders traveled outside the United States looking for work. In Europe, the popularity of vodka was slowly spreading from the East. When the bartenders returned home after the repeal of the 18th Amendment, they brought vodka with them, and it has been a fixture on stateside drink menus ever since.
