Brown Sauce

American steak sauce is derived from British brown sauce. This condiment first appeared in 1862 in London’s The Practical Family Cookery Book. It lists traditional ingredients, including tomatoes, molasses, apples, dates, tamarind, spices, vinegar, and raisins. In Britain, this sauce is enjoyed on full breakfasts, with chips or fries, and on steak.

The Big Three

steakhouse springdaleThere are three leading steak sauce manufacturers in the world: Heinz 57®, A.1.®, and Lea & Perrins®. Henderson William Brand invented A.1. sauce in 1831 in Great Britain. He made the condiment for King George IV, who dubbed it “A1.” Brand realized the opportunity he had and began manufacturing the product. It was publicly released in London in 1862 and in the United States in 1895.

Heinz 57 first released their Heinz Beefsteak Sauce in 1911 to coincide with the rise of outdoor grilling. It was later renamed Heinz 57 Sauce in 1940 when people started using it for other grilled meats.

British manufacturer Lea & Perrins first created their steak sauce, which is often considered Worcestershire Sauce, in the early 1800s. This sauce came about because a nobleman named Lord Sandys returned to Worcester, England, with a recipe he’d discovered while traveling in Bengal. He hired chemists William Perrins and John Lea to recreate this sauce.

Entrepreneur John Duncan brought it to the U.S. in 1839, making it the first commercially bottled condiment in the country. It has remained a timeless favorite in steakhouses ever since.

Variations
