1. Koobideh

Koobideh is made with seasoned ground meat shaped on a skewer and grilled. The beef version is also called chelow kebab and is the national dish of Iran. Koobideh can also be made with other meats like ground chicken.

2. Barg

These kebabs use strips of meat that have been marinated. The marinade includes onion juice and garlic to enhance the meat’s flavor. This dish is often made with filet mignon and served with saffron rice.

3. Chenjeh

This option is made from sirloin or lamb. Similar to barg kebabs, it relies on a marinade containing onion, garlic, yogurt, and lemon. The original word for this dish was "kenjeh," but the pronunciation and eventually the spelling changed over time.

4. Soltani

Soltani means “the king’s,” as in the king’s meal. This is the name for a meal that includes one skewer of koobideh kebab and one skewer of barg. If you can’t decide which you’d prefer, this is the best way to get a taste of both.

5. Seafood

The most common meats for a kebab are beef, chicken, and lamb. However, you can sometimes find other options. Charred salmon is a favorite, usually served with dill rice, and shrimp can also be found on some menus, although it’s rarer. The rich flavors of these seafood selections pair well with the hints of smoke and charcoal from grilling.
