Ancient Origins

As far as historians can tell, providing food and drink for feasts and banquets in a professional capacity dates back to the 4th millennium BC. Both Chinese and Egyptian societies hosted large events with lots of eating and drinking. A few thousand years later, the Ancient Greeks made catering a lucrative trade by offering these services at their inns. The practice continued into the Roman Empire, though it was primarily used to serve soldiers.

However, when the French Revolution toppled the aristocracy in the 18th century, catering guilds were forced to find new revenue streams. As a result, luxurious restaurants were born. Later, such restaurants branched out to offer catering services as well as dine-in meals. 

In the United States 

Catering has been a part of American culture since the country’s infancy. The earliest recorded catered event was a ball hosted in Philadelphia in 1778. By 1820, catering had become a profitable business in the United States. The most successful catering companies were founded by those in the restaurant industry. 

Roughly a century later, caterers had to simplify their menus because of the food rationing imposed by World War II. The industry blossomed once more in the 1970s when more women started joining the workforce and monetized what they had already been doing as housewives.

Today, catering helps provide varying and delicious food to weddings, office parties, and conferences. Most companies offer the option of a buffet-style set-up or individual meals for each guest.
