How to Make the Most of Wagyu Farm Fresh Beef

1. Cook from Room Temperature

Wagyu beef is highly marbled with fat, which gives it the rich, subtle flavors for which it’s famous. The best way to get the most out of your favorite cut is through quick cooking, allowing the fat to easily diffuse throughout the meat and unlock the full flavor. Cold fat will take much longer to break down, so remove your beef from the fridge and let it come to room temperature before cooking.

2. Season It Lightly

Wagyu-producing cattle are raised on premium grass diets to make their beef exceptionally flavorful, so adding a lot of seasoning will do little more than drown out its natural taste. Wagyu beef is best when allowed to shine on its own, so leave your seasonings in the spice rack while cooking.

3. Use Salt

Salt will help beef retain the tasty fat that might otherwise evaporate while searing steaks and roasts, and highlight the flavor profile of your preferred cut. If you’re pan-frying Wagyu steak, simply sprinkle both sides with sea salt and pepper.

4. Allow Your Meat to Rest Before Eating

Just before your Wagyu beef is fully cooked, remove it from the stove or oven and wrap it in foil. Place it in a warm area and leave it to rest, 5 minutes for steaks, and 15-20 minutes for roasts. The residual heat trapped by the foil will finish cooking the beef while allowing the juices and fats to distribute themselves evenly throughout the meat. Thus, when you peel back the foil, you’re left with a fully-cooked, tender cut of beef at the perfect temperature for eating.
