Roasting is required to turn mostly tasteless green coffee beans into flavor-packed brews. Beyond that, the level at which the beans are heated impacts their overall taste. To help you shop for the right roast for your taste, here's a closer look at the three options and how they differ. 

Light 

Light roast coffees spend the least amount of time roasting. The beans are heated up to an internal temperature of around 400 degrees and removed before or directly after the first crack—substantial heat causes the shells to pop. The level of cracking is a distinguishing factor between the roast levels.

When completed, the beans present a light brown shade with a matte finish, as there's no oil on the surface. Chemically, they're highly acidic, resulting in a tangy taste, and provide a full dose of caffeine. These qualities allow the distinct flavors of the beans to shine without much alteration. New England and Cinnamon roasts are common examples of light coffees. 

Medium

With medium roasts, the heat goes up. These coffee beans are prepared until they reach a temperature of at least 410 degrees and removed before the second cracking of the exterior. 

As with light variations, the beans are mostly free of surface oil, but they showcase a medium brown color. The flavor offers a balance between the original bean flavors and an enhanced body created during roasting. Kona coffee, along with Breakfast and City roasts, are popular examples.

Dark

Dark roasts require achieving a roasting temperature of at least 464 degrees but no higher than 482 degrees. Any higher, and there's a risk of burning, which ruins the flavor. At these higher temperatures, oil is released from within the bean, creating a reflective shine on the dark brown to black surface. 

When brewed, the roasting process becomes the leading dictator of taste, overpowering the original flavors with a bold smokiness. Additionally, the caffeine levels are far lower than light and medium options. For a dark-roasted coffee, reach for a French, Italian, or Spanish blend.
