In general, the higher the glucose/fructose ratio in honey, the faster the honey will crystallize. Glucose is supersaturated in all honeys to varying degrees and its interaction with other components of the honey determines the rate and size of its crystallization as it loses it's supersaturated state and emerges as a dextrin solid or glucose monohydrate (crystallization). Fructose, on the other hand, is more water soluble, and the specific ratio of fructose to glucose in Tupelo honey (approximately 43%/26%) happens to produce the most uniquely slow to crystallize honey in the world. Yeah, yeah...too much science, but hey! if you weren't interested, you wouldn't have made it this far! :)

3. Low Glycemic Number

Coming in at an average of 54 on the glycemic index, Tupelo Honey is considered to have a low glycemic number. This means that it will spike your blood sugar less than almost all other honeys, and many other sweeteners.
