Who Invented Buffalo Chicken?

Chicken wings have been served with beer as far back as the 1920s. During prohibition, speakeasies offered patrons a “free lunch,” as long as they paid for their drinks, and it often included wings, which were fairly cheap at the time. It wasn’t until the 1950s, though, that establishments in Chicago started coating the wings in a spicy sauce comprised of vinegar, ketchup, sugar, and red pepper.

The name “Buffalo chicken” originated a few years later in—you guessed it—Buffalo, New York. Legend has it that the first plate of “Buffalo Wings” was served at Anchor Bar one Friday night in 1964. Teressa Bellissimo, the bartender’s mother, chopped the wings in half and deep-fried them before coating them in a secret spicy sauce and serving them with celery, carrot sticks, and blue cheese dressing.
