Fajitas are a delicious staple in Mexican cuisine, consisting of warm, soft tortillas stuffed with savory meat, veggies, guacamole, and more of your favorite ingredients. Composing a fajita for the perfect bite isn't exactly rocket science, but it does take a little practice. Here's what to do the next time you're eating at your favorite Mexican restaurant

How to Build & Eat Fajitas

1. Start With Soft Fillings

Ask your Mexican restaurant server for a separate plate for rice, beans, and other sides, so you have plenty of space for packing your fajita. With the warm tortilla spread across your plate, use a spoon to spread the softer ingredients, such as sour cream, guacamole, and beans, down the center and away from the edges. This base layer will serve as an adhesive for the main components to help keep the fajita together. 

2. Stack Meat & Veggies

Whether you prefer chicken, beef, or seafood, make sure the meat is cut into small, bite-sized pieces before layering it over the soft ingredients. Add peppers, onions, and other veggies over the meat, ensuring the ratio of greens to protein is balanced.

Add the finishing touches, such as cheese, salsa, and an additional dab of sour cream. Avoid overstuffing the tortilla, and leave room around the perimeter for folding.

3. Create a Barrier

Take the bottom edge of the tortilla and pull it up about an inch or two to create a barrier that will keep in your filling. Then, hold the bottom fold and bring in both edges to the center, so they overlap to make a pocket. 

Next, turn the tortilla over to keep the folded area closed on the plate, and always bite at the open end when you lift it up. Between bites, return your fajita to this same position with the folds down on the plate—but the less you put it down, the better your filling will stay inside.

4. Prepare for the Next One

Even the tightest fajita may spill out delicious ingredients, so have a fork ready to scoop up whatever falls out. Try to clean the plate as much as possible before making your second fajita. This way, toppings from the first don’t saturate the fresh tortilla.
